Ingredients
- 1 cup of rolled oats.
- 1 cup coconut milk.
- 1 ripe banana, mashed (about ⅓–½ cup).
- 2 tablespoons creamy almond butter.
- 2 tablespoons honey (or use sugar cane syrup for a vegan option).
- 1 tablespoon chia seeds.
- Clove, cinnamon, and cardamom powder to taste.
- ½ teaspoon pure vanilla extract.
- Pinch of fine salt.
- Optional toppings: sliced bananas, almond butter, goji berries, and chopped nuts.
Instructions:
- In a bowl, whisk together all the ingredients except for the toppings until well combined.
- Divide the mixture evenly among three jars or containers.
- Seal the jars and refrigerate for at least 4 hours or overnight to allow the pudding to set.
- Add your choice of toppings just before serving.
