Ingredients

  • 1 cup of rolled oats.
  • 1 cup coconut milk.
  • 1 ripe banana, mashed (about ⅓–½ cup).
  • 2 tablespoons creamy almond butter.
  • 2 tablespoons honey (or use sugar cane syrup for a vegan option).
  • 1 tablespoon chia seeds.
  • Clove, cinnamon, and cardamom powder to taste.
  • ½ teaspoon pure vanilla extract.
  • Pinch of fine salt.
  • Optional toppings: sliced bananas, almond butter, goji berries, and chopped nuts.

Instructions:

  • In a bowl, whisk together all the ingredients except for the toppings until well combined.
  • Divide the mixture evenly among three jars or containers.
  • Seal the jars and refrigerate for at least 4 hours or overnight to allow the pudding to set.
  • Add your choice of toppings just before serving.
