Ingredients:

  • 1 cup rolled oats.
  • 1 cup coconut milk.
  • ⅓ cup pumpkin puree.
  • 2 tablespoons chopped pecans.
  • 2 tablespoons honey (use maple syrup for a vegan option).
  • 2 teaspoons chia seeds or flax meal (or 1 teaspoon of each).
  • Clove, cinnamon, and cardamom powder to taste.
  • 1 teaspoon pure vanilla extract.
  • Optional toppings: whipped cream, additional chopped pecans, and a cinnamon stick.

Instructions:

  • In a bowl, whisk together all the ingredients until well combined, leaving out the optional toppings.
  • Divide the mixture evenly among three jars or containers.
  • Seal the jars and refrigerate for at least 4 hours or overnight to allow the pudding to set.
  • Add any optional toppings just before serving.
