Ingredients:
- 1 cup rolled oats.
- 1 cup coconut milk.
- ⅓ cup pumpkin puree.
- 2 tablespoons chopped pecans.
- 2 tablespoons honey (use maple syrup for a vegan option).
- 2 teaspoons chia seeds or flax meal (or 1 teaspoon of each).
- Clove, cinnamon, and cardamom powder to taste.
- 1 teaspoon pure vanilla extract.
- Optional toppings: whipped cream, additional chopped pecans, and a cinnamon stick.
Instructions:
- In a bowl, whisk together all the ingredients until well combined, leaving out the optional toppings.
- Divide the mixture evenly among three jars or containers.
- Seal the jars and refrigerate for at least 4 hours or overnight to allow the pudding to set.
- Add any optional toppings just before serving.
