Ingredients:
- 2 pears, peeled
- 2 cups coconut milk yogurt (or your choice of yogurt)
- 2 tablespoons honey
- 2 teaspoons cinnamon
- 2 tablespoons toasted coconut chips
Instructions:
Peel, halve, and core the pears. Place the pears, cut side down, in a pan. Add water until the pears are just covered. Bring to a boil, then reduce the heat and simmer for 20-30 minutes, or until the pears are soft. Turn the pears halfway through to ensure even poaching.
In serving bowls, add coconut milk yogurt and drizzle with honey. Gently place the hot pears on top, sprinkle with cinnamon, and top with crumbled toasted coconut chips.
